Today I ventured into making chocolate orange cupcakes. I used my trusty pound cake recipe as a basis.
Ingredients for 48 cupcakes (I KNOW!):
600 g of self-raising flour
500 g of butter or margarine (I use Stork. For the Belgians: go for Solo, it's awesome in cakes)
500 g of sugar
350 g of dark chocolate
Put the sugar and flour in a bowl, then add the eggs. Make sure the butter is soft, I microwaved mine for about a minute. Stork cups take microwaving quite well, so just take the lid off and pop it in.
Mix the lot together.
Then grate the zest of both oranges into the mix.
Half the oranges and squeeze the juice into the bowl. Stir well again.
Melt the chocolate over hot water (aka au bain marie), then stir that into the batter.
Pour into cupcake cups.
They take roughly 40 minutes on gasmark 5, centre of the oven. They turn out lovely and fluffy and the orange is quite subtle in the chocolatey abundance.
You can top these with homemade marshmallow swirls, which are quite simple to make if you follow this recipe, but I couldn't be bothered this time
